Ingredients
1 tin chickpeas (drained and rinsed)
Zest and juice of 1/2 lemon
1 tbsp mango chutney
3 tsp medium curry powder
1 tsp turmeric
1 small red onion, finely diced
A handful of sultanas
4–5 tbsp vegan mayonnaise
Add chopped fresh coriander or a few toasted almonds for extra texture and flavour
Method
1. In a large bowl, mix the chickpeas, lemon zest and juice, mango chutney, curry powder, turmeric, and diced red onion.
3. Stir in the sultanas and mayonnaise until everything is well combined.
4. Taste and adjust seasoning if needed – add more chutney for sweetness or lemon juice for zing.
Tastes great in a sandwich lightly mashed with rocket or dolloped on top of a jacket potato.
