A classic French herb mixture alongside Bouquet Garni and Herbes de Provence. It is designed to enhance the natural flavour of foods rather than to be a flavouring in itself.
The mixture contains parsley, chervil, chives and tarragon and is well suited to use in soups, fish and vegetable dishes, omelettes and cheese dishes.
A teaspoon full will suffice for a meal for 4.
If the small pieces of leaf will detract from the appearance of the dish, tie the Fines Herbes in a muslin bag before use and remove before serving.
