Ingredients

  • 2 nests egg noodles
  • 1 red chilli deseeded and finely chopped
  • Thumb-sized piece of fresh ginger
  • Drizzle of sesame oil
  • Juice and zest of 1 lime
  • 2 tbsp dark soy sauce
  • Handful of sugar snap peas, sliced lengthways
  • Handful of baby corn, sliced
  • 4 spring onions, sliced (reserve a few for garnish)
  • 1 red pepper, diced
  • Small bunch of coriander, chopped (save some for garnish)
  • Optional: sesame seeds for garnish

Method

  1. Place the egg noodles in a bowl of boiling water for 5 minutes. Drain and then rinse under cold water, toss with a drizzle of sesame oil to stop them sticking.
  2. In a small bowl, mix together the chilli, ginger, lime zest and juice and soy sauce.
  3. Bring it all together – In a large bowl, combine the noodles, chopped veg and dressing. Mix well so everything is coated and colourful.
  4. Garnish & serve – Top with the reserved coriander, spring onion slices, and a sprinkle of sesame seeds if using.
