Vegan Coronation Chickpeas

A delicious twist on the classic, perfect as a sandwich filler, jacket potato topping or salad side.

Ingredients

  • 1 tin chickpeas (drained and rinsed)

  • Zest and juice of 1/2 lemon

  • 1 tbsp mango chutney

  • 3 tsp medium curry powder

  • 1 tsp turmeric

  • 1 small red onion, finely diced

  • A handful of sultanas

  • 4–5 tbsp vegan mayonnaise

  • Add chopped fresh coriander or a few toasted almonds for extra texture and flavour

Directions

  • In a large bowl, mix the chickpeas, lemon zest and juice, mango chutney, curry powder, turmeric, and diced red onion.
  • Stir in the sultanas and mayonnaise until everything is well combined.
  • Taste and adjust seasoning if needed – add more chutney for sweetness or lemon juice for zing. Tastes great in a sandwich lightly mashed with rocket or dolloped on top of a jacket potato.
