Vegan Coronation Chickpeas

minutesA delicious twist on the classic, perfect as a sandwich filler, jacket potato topping or salad side.
Ingredients
1 tin chickpeas (drained and rinsed)
Zest and juice of 1/2 lemon
1 tbsp mango chutney
3 tsp medium curry powder
1 tsp turmeric
1 small red onion, finely diced
A handful of sultanas
4–5 tbsp vegan mayonnaise
Add chopped fresh coriander or a few toasted almonds for extra texture and flavour
Directions
- In a large bowl, mix the chickpeas, lemon zest and juice, mango chutney, curry powder, turmeric, and diced red onion.
- Stir in the sultanas and mayonnaise until everything is well combined.
- Taste and adjust seasoning if needed – add more chutney for sweetness or lemon juice for zing. Tastes great in a sandwich lightly mashed with rocket or dolloped on top of a jacket potato.
